Bozena Shiro (pea flour sauce)
What you need:
- 1 cup of red onion (chopped)
- 1-1/2 lbs of ground beef
- 1 cup of spiced butter (Nit’ir Qibe)
- 1 cup of of shiro powder, (the powder comes in hot or mild available at your local Ethiopian market)
- 1/4 tsp ginger
- 1/2 tsp false cardamom- (If you are using the small seeds you must crush or grind the seeds either using a morter and pestle or a coffee grinder.)
- Salt to taste
- 2 cups of water
What you do:
- Cook the onions in the spiced butter.
- Add water and stir gently
- When water boils add the meat and mix well.
- Add shiro powder while stirring to prevent lumping.
- Add the ginger and the false cardamom.
- Cook until the butter rises up to the surface.
- Serve hot with injera or you could use corn chips and use this as a dish of sorts.
- Serves 6.
