Curly Kale with Smoked Sausage
This is a traditional recipe in the Netherlands- I make this so my children can experience food from their fathers heritage.
What you need:
- 1 lb of Kale- stripped from the stem and finely chopped.
- 1 lb of smoked sausage- what ever kind you like, pork, beef, turkey.
- 6-7 potatoes, peeled and chopped.
- 1 Tbls of butter, margarine or vegan spread.
- Pepper- just a dash
- 1/2 -1 cups of milk, or for a non dairy option use unflavored rice milk or chicken/veggie stock.
What you do:
- Combine in pan kale and sausage with a little water.
- Cook kale until it is tender and sausage is heated through.
- In a seperate pan cook the potatoes until tender with a little salt.
- Mash potatoes as you like with, butter, mik, rice mik, broth etc.
- Mash the potatoes with the kale and put mixture on a platter.
- Serve with sausages.
