ET-Beet salad: (Yeqey Sir Qiqqil)
Ethiopian Beet salad: (Yeqey Sir Qiqqil)
What you need:
- 4 medium beets
- 3 Tbsp. lemon
- 3 Tbsp. oil (I use olive oil but you can use a more mild flavored oil if you like)
- Salt to taste
- Water
What you do:
- Wash your beets and put into a large pot of water.
- Bring water to boil, then reduce to a simmer for about 45 minutes or until beets are tender.
- Rinse beets under cool water to get the skin off, it should just slide off.
- Cut beets into cubes or slices that are bite size.
- Mix lemon juice and oil together in seperate bowl.
- Add lemon mixture to beets and mix .
- Add salt to taste, Ethiopian use a lot of salt.
- Serve cold.

Hi! How is “Little Felipe” doing? I had this for dinner — but only with Carrots, Potatoes, Onions, and boiled eggs — mayonnaise on top. Deliiiiiicious! Thanks for posting the recipes!
