Boiled Kale (Zelbo Gomen)

What you need:

  • 1 lb of kale
  • 1 cup of red onion (chopped)
  • 1/2 oil ( I use canola)
  • 1 Tbsp. garlic mashed
  • 1 Tbsp. ginger mashed
  • 4 cups of water
  • Salt to taste

What you do:

  • Wash the kale in cold water.
  • Tear the leaves from the stem. (tearing the kale into small pieces makes this dish easier to eat with injera) You may also cook the kale leaves and cut them after they are tender if you like.
  • Peal the stems and cut into small pieces.
  • Add water to the kale and bring to a boil.
  • Stir in the salt, onion, oil, ginger, and garlic.
  • Cook until the kale is tender about 25 minutes.
  • You can serve this dish hot or cold, this dish will serve 6.
