Bozena Shiro (pea flour sauce)

What you need:

  • 1 cup of red onion (chopped)
  • 1-1/2 lbs of ground beef
  • 1 cup of spiced butter (Nit’ir Qibe)
  • 1 cup of of shiro powder, (the powder comes in hot or mild available at your local Ethiopian market)
  • 1/4 tsp ginger
  • 1/2 tsp false cardamom- (If you are using the small seeds you must crush or grind the seeds either using a morter and pestle or a coffee grinder.)
  • Salt to taste
  • 2 cups of water

What you do:

  • Cook the onions in the spiced butter.
  • Add water and stir gently
  • When water boils add the meat and mix well.
  • Add shiro powder while stirring to prevent lumping.
  • Add the ginger and the false cardamom.
  • Cook until the butter rises up to the surface.
  • Serve hot with injera or you could use corn chips and use this as a dish of sorts.
  • Serves 6.
