Curly Kale with Smoked Sausage

This is a traditional recipe in the Netherlands- I make this so my children can experience food from their fathers heritage.

What you need:

  • 1 lb of Kale- stripped from the stem and finely chopped.
  • 1 lb of smoked sausage- what ever kind you like, pork, beef, turkey.
  • 6-7 potatoes, peeled and chopped.
  • 1 Tbls of butter, margarine or vegan spread.
  • Pepper- just a dash
  • 1/2 -1 cups of milk, or for a non dairy option use unflavored rice milk or chicken/veggie stock.

What you do:

  • Combine in pan kale and sausage with a little water.
  • Cook kale until it is tender and sausage is heated through.
  • In a seperate pan cook the potatoes until tender with a little salt.
  • Mash potatoes as you like with, butter, mik, rice mik, broth etc.
  • Mash the potatoes with the kale and put mixture on a platter.
  • Serve with sausages.
