ET-Beet salad: (Yeqey Sir Qiqqil)

Ethiopian Beet salad: (Yeqey Sir Qiqqil)

What you need:

  • 4 medium beets
  • 3 Tbsp. lemon
  • 3 Tbsp. oil (I use olive oil but you can use a more mild flavored oil if you like)
  • Salt to taste
  • Water

What you do:

  • Wash your beets and put into a large pot of water.
  • Bring water to boil, then reduce to a simmer for about 45 minutes or until beets are tender.
  • Rinse beets under cool water to get the skin off, it should just slide off.
  • Cut beets into cubes or slices that are bite size.
  • Mix lemon juice and oil together in seperate bowl.
  • Add lemon mixture to beets and mix .
  • Add salt to taste, Ethiopian use a lot of salt.
  • Serve cold.

    Hi! How is “Little Felipe” doing? I had this for dinner — but only with Carrots, Potatoes, Onions, and boiled eggs — mayonnaise on top. Deliiiiiicious! Thanks for posting the recipes!
