Gluten free stuffing

What you need:


  • 6 cups of gluten-free bread cubes or 1 package of gluten-free pre-made bread crumbs that are already toasted.  (Whole foods has some pre toasted bread cubes).
  • 2 shallots ,minced
  • 2 onions, diced
  • 2 celery ribs, diced
  • 2 carrots, diced
  • 6 Tbsp of non-dairy butter spread or butter if you can eat it
  • 2 Tsp dried sage
  • 2 Tsp dried thyme
  • 2 Tsp sea salt, or to taste
  • 1 Tsp black pepper, or to taste
  • 1/2 cup white wine
  • 1 cup of gluten-free chicken broth
  • 4 Tbsp fresh parsley chopped
  • 1 package of breakfast sausage cut into small pieces
  • 1 apple diced

What you do:


  • Toast the bread cubes that you have made in a 300 degree oven for 20 minutes or until dried, stirring occasionally to attain even browning.  Be careful to watch your bread cubes closely so they do not burn.  If you are using pre-toasted bread cubes then you can skip this step.
  • Saute shallots, onion, celery, and carrots in butter or a non-dairy spread until they are soft and begin to caramelize.
  • Add sage, thyme, salt and pepper and cook over medium heat for 2 minutes.
  • Add wine and continue to cook over medium heat until the mixture has reduced by half.
  • In a large bowl, mix sautéed vegetables with bread cubes, chicken broth, parsley, apple and sausage.
  • Transfer into a baking dish and cook for 20 minutes at 325 or stuff your turkey with it. (If cooking in a bake dish make sure your sausage is fully cooked- after about 20 minutes it should be but if it is not then cook stuffing until the sausage is fully cooked).
